Peanut butter peri peri chicken and samp (huku ine dovi nemantsuchu)

INGREDIENTS
500g chicken thigh fillets cubed 3cm
1 brown onion chopped
4 tomatoes chopped
2 garlic cloves minced
1 long chilli chopped
1.5 teaspoon chilli flakes
1 teaspoon paprika
200mls coconut cream
1 cup chicken stock
2 shallots chopped
¼ cup peanut butter or less so its not too overpowering for you
1 tablespoon olive or oil of choice ( I use coconut oil)
1 cup samp
METHOD
Heat oil in a saucepan
Saute onion and garlic till onions are translucent
Add tomatoes and cook for 5minutes
Add peanut butter and mix till it melts
Add coconut cream and let it simmer for 2 minutes
Bring the chicken to the pot and let it cook for 15 minutes
Meanwhile boil some water and rinse the samp
Place in a saucepan and add 4-5 cups of boiled water
Let it cook until it is tender
Serve with the chicken and sprinkle the chopped shallots
