About a year ago I was on this SBS cooking show called The Chefs Line. My secret ingredient was peanut butter. What people dont realise is you can put peanut butter in pretty much anything. This recipe is an old time favourite for many Zimbabweans and I am sure they would attest to that.
Bunch of pumpkin leaves (peeled always peel the stalks to get rid of the prickly bits) thinly chopped
2 chopped tomatoes
1/4 cup peanut butter
Salt to taste
1 cup water
Place chopped leaves in a pot and add water, salt and tomatoes
Cook them on medium heat for about 10 minutes
Add the peanut butter by stirring until everyth oj ng is completely mixed
Leave to simmer for about 3 minutes
Remove from heat and serve with anything of choice. In Zimbabwe we eat the veges with sadza.
